Homemade Chicken Ham(鳥はむ/鶏ハム)

I’ll introduce a very simple "homemade chicken ham"(Torihamu:鳥はむ/鶏ハム)recipe.
Homemade Chicken Ham is a dish of boiled chicken breast meat, not smoked, which is a popular way to cook ham.

This Homemade Chicken Ham dish was born of many discussions on the internet textboard such as "2channel"(2ちゃんねる) between amature enthusiasts looking to create a recipe that would leave their chicken breasts more moist and tender to the tongue.

■Ingredients
2 Chicken breasts (large) (200g×2)
Sugar 4g 
Salt 4g *

 

■Direcitions
1.Remove skin from raw chicken. Sprinkle sugar and salt on chicken.

Lay them in the refrigerator for about 24 hours for ageing of protein.

 

*Interesting fact ! :This recipe uses a 1% salt and sugar ratio to the chicken meat. This is ideal because it is said by culinary proffessionals in Japan that because the human body has the same salt ratio as the recipe (1%), it is more appealing to the pallette. A 1% sugar ratio is recommended for balance in the recipe. Sugar makes meat tender.

2.Wrap the chicken to remove air as much as possible and tie.

3.Put the chicken into boiled water for the chicken.

The temperature is carefully at 70 ℃ 〜75 ℃.

4.Slice into bite-sizes, arrange on salad, sandwiches as you like.
